Chicken Cheese Paratha Filling
Ingredients:
- 400g boneless chicken cubes
- 12-15 sliced green chilies
- 5-6 sliced garlic cloves
- A handful of fresh coriander
- 2 small grated and squeezed onions
- 1.5 tbsp crushed coriander seeds
- 1.5 tbsp crushed red chilies
- 1.5 tbsp roasted and crushed cumin seeds
- 1 tsp salt (or to taste)
- 1 tsp black pepper powder
- 1/2 tbsp lemon juice
- 2-3 tbsp cheddar cheese
Instructions:
- Finely chop the chicken cubes in a chopper.
- Add chopped green chilies, garlic, and fresh coriander to the chicken and process until finely chopped. Transfer to a bowl.
- Combine the chicken mixture with grated onion, coriander seeds, red chilli, cumin seeds, salt, black pepper, cream, and lemon juice. Mix thoroughly.
Preparing the Dough for Chicken Cheese Paratha
Ingredients:
- 3 cups sifted white flour
- 1.5 tsp salt (or to taste)
- 3 tbsp melted ghee (clarified butter)
- 1 cup water (or as needed)
- 1 tsp melted ghee
- Additional melted ghee for greasing and frying
- 1 cheddar cheese slice
- 1 tbsp melted ghee
Instructions:
- In a large bowl, combine the sifted flour and salt.
- Gradually add the melted ghee to the flour mixture and rub it in with your fingertips until it resembles coarse crumbs.
- Add water gradually, mixing until a dough forms. Knead the dough for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes.
- Divide the rested dough into equal-sized portions.
- Roll out each portion into a thin, circular shape. Place a spoonful of the chicken filling and bring the edges to cover the filling and make a circle. Make it a circular paratha and it’s ready to fry.
- Fry until golden brown and crispy on all sides.
- Serve hot with your favorite chutney or sauce.
