Spicy Tuna and Avocado Salad Bowls

Time: 20 minutes
Servings: 4

Ingredients:

  • 2 cans (170g each) tuna in water, drained
  • 1 avocado, diced
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cups cooked brown rice
  • 1 cucumber, sliced
  • 1 carrot, shredded
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions:

  1. In a bowl, mix tuna, mayonnaise, sriracha, soy sauce, and sesame oil until well combined.
  2. Prepare the bowls by dividing cooked brown rice among four meal prep containers.
  3. Top each bowl with diced avocado, cucumber slices, shredded carrot, and the tuna mixture.
  4. Sprinkle with sesame seeds and sliced green onions.
  5. Cover the bowls with lids and store in the fridge for up to 7 days.
