Zucchini Noodles with Pesto

Ingredients:

  • 2 large zucchinis
  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1/4 cup water (adjust as needed)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Cherry tomatoes, halved (optional, for garnish)
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Prepare the Noodles:
    • Use a spiralizer or julienne peeler to create zucchini noodles.
    • Place the noodles in a colander and sprinkle with a little salt.
    • Let them sit for about 10 minutes to draw out excess moisture.
    • After 10 minutes, gently squeeze the noodles to remove any remaining water.
  2. Make the Pesto:
    • In a food processor or blender, combine the basil leaves, parsley leaves, garlic, nutritional yeast, lemon juice, and water.
    • Blend until smooth, adding more water if needed to reach your desired consistency.
    • Season with salt and pepper to taste.
  3. Combine Noodles and Pesto:
    • In a large bowl, toss the zucchini noodles with the pesto sauce until well coated.
  4. Serve:
    • Divide the zucchini noodles between two plates.
    • Garnish with halved cherry tomatoes and fresh basil leaves if desired.
    • Serve immediately.
