Ingredients:

  • 4 whole-grain tortillas
  • 1 cup hummus
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 red bell pepper, julienned
  • 1/2 cup fresh spinach leaves

Instructions:

  1. Spread a layer of hummus on each tortilla.
  2. Layer cucumber, carrot, bell pepper, and spinach on top.
  3. Roll up tightly and slice into bite-sized pieces.
