Ingredients:
- 1 large carrot, diced
- 2 celery stalks, diced
- 1 large zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14.5 oz) diced tomatoes, undrained
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup fresh spinach, chopped

- Dice the carrot, celery stalks, zucchini, red bell pepper, and yellow bell pepper.
- Chop the onion and mince the garlic.
- Trim and cut the green beans into 1-inch pieces.
- Chop the fresh spinach.
- In a large pot, add a splash of water or vegetable broth to prevent sticking.
- Add the chopped onion and minced garlic. Sauté over medium heat until the onion becomes translucent, about 5 minutes.
- Add the diced carrot, celery, zucchini, red bell pepper, yellow bell pepper, and green beans to the pot.
- Stir in the diced tomatoes with their juice.
