Hearty and Healthy Vegetable Soup Recipe

Ingredients:

  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 1 large zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped

 Cooking Instructions

Instructions:

  • Dice the carrot, celery stalks, zucchini, red bell pepper, and yellow bell pepper.
  • Chop the onion and mince the garlic.
  • Trim and cut the green beans into 1-inch pieces.
  • Chop the fresh spinach.
  • In a large pot, add a splash of water or vegetable broth to prevent sticking.
  • Add the chopped onion and minced garlic. Sauté over medium heat until the onion becomes translucent, about 5 minutes.
  • Add the diced carrot, celery, zucchini, red bell pepper, yellow bell pepper, and green beans to the pot.
  • Stir in the diced tomatoes with their juice.
  • Pour in the vegetable broth.
  • Add the dried thyme, basil, oregano, salt, and pepper.
  • Bring the mixture to a boil over high heat.
  • Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the vegetables are tender.
  • Stir in the chopped spinach and let it wilt in the hot soup for about 2 minutes.
  • Taste and adjust the seasoning with additional salt and pepper if needed.
  • Ladle the soup into bowls and serve hot.
