Fluffy Vegetable Omelette Recipe

Ingredients:

  • 2 eggs
  • 1/4 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/4 cup spinach
  • Salt and pepper to taste
  • Cooking spray or a small amount of olive oil

Vegetable Omelette Cooking Instructions

Instructions:

  1. In a bowl, whisk the eggs and season with salt and pepper.
  2. Cut all the vegetables and put to the side.
  3. Heat a non-stick pan over medium heat and spray with cooking spray or add olive oil.
  4. Add the diced bell peppers and onion in the hot pan. 
  5. Sauté the bell pepper and onion until softened. 
  6. Add spinach and cook until wilted.
  7. Pour the eggs over the vegetables and cook until set, folding the omelette in half.
  8. Plate out and top with parsley or spring onions.
  9. Enjoy!
