Vegetable Egg Muffins

Start your day with a nutritious and satisfying breakfast! Our Vegetable Egg Muffins are packed with flavor and protein. These convenient and portable muffins are perfect for on-the-go and can be customized with your favorite vegetables.  

Vegetable Egg Muffins

Servings: 6 muffins
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients:

6 large eggs

1/2 cup diced bell peppers

1/2 cup diced tomatoes

1/4 cup chopped spinach

Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk eggs and season with salt and pepper.
  3. Add bell peppers, tomatoes, and spinach.
  4. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
  5. Bake for 20 minutes or until eggs are set.
  6. Let cool slightly before removing from the tin.
  7. Serve warm or store in the fridge for up to 3 days.
