Teriyaki Salmon with Brown Rice and Steamed Broccoli

Ingredients:
4 salmon fillets (about 150g each)
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 1/2 cups brown rice
3 cups water
2 cups broccoli florets
1 tablespoon sesame seeds for garnish (optional)
Instructions:
- In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
- Marinate the salmon fillets in this mixture for at least 15 minutes.
- Meanwhile, bring the water to a boil in a saucepan, add the brown rice, cover, and simmer for 25 minutes or until the rice is cooked.
- Preheat the oven to 200°C (400°F).
- Place the marinated salmon fillets on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the salmon is cooked to your liking.
- Steam the broccoli florets for 5-7 minutes until tender.
- Once everything has cooled to room temperature, divide the rice, salmon, and broccoli into meal prep containers.
- Store in the fridge for up to 4 days.
