Teriyaki Salmon with Brown Rice and Steamed Broccoli

This balanced meal is packed with protein, carbohydrates, and vegetables. The flavorful teriyaki sauce complements the salmon perfectly, while the brown rice and steamed broccoli provide essential nutrients.

Teriyaki Salmon with Brown Rice and Steamed Broccoli

Time: 30 minutes
Servings: 4

Ingredients:

4 salmon fillets (about 150g each)

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 1/2 cups brown rice

3 cups water

2 cups broccoli florets

1 tablespoon sesame seeds for garnish (optional)

Instructions:

  1. In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. 
  2. Marinate the salmon fillets in this mixture for at least 15 minutes.
  3. Meanwhile, bring the water to a boil in a saucepan, add the brown rice, cover, and simmer for 25 minutes or until the rice is cooked.
  4. Preheat the oven to 200°C (400°F). 
  5. Place the marinated salmon fillets on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the salmon is cooked to your liking.
  7. Steam the broccoli florets for 5-7 minutes until tender.
  8. Once everything has cooled to room temperature, divide the rice, salmon, and broccoli into meal prep containers. 
  9. Store in the fridge for up to 4 days.
