Quinoa and Veggie Stuffed Bell Peppers: Healthy and Hearty

Ingredients:
- 4 bell peppers (any color)
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup black beans, rinsed and drained
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Cook quinoa in vegetable broth according to package instructions.
- In a large pan, sauté onion and garlic until translucent.
- Add zucchini and cherry tomatoes; cook until soft.
- Mix in cooked quinoa, black beans, cumin, paprika, salt, and pepper.
- Stuff bell peppers with the quinoa mixture and place them in a baking dish.
