Quinoa and Veggie Stuffed Bell Peppers: Healthy and Hearty

Servings: 4

Ingredients:

  • 4 bell peppers (any color)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. Cook quinoa in vegetable broth according to package instructions.
  4. In a large pan, sauté onion and garlic until translucent.
  5. Add zucchini and cherry tomatoes; cook until soft.
  6. Mix in cooked quinoa, black beans, cumin, paprika, salt, and pepper.
  7. Stuff bell peppers with the quinoa mixture and place them in a baking dish.
  8. Bake for 25-30 minutes until peppers are tender.
  9. Garnish with fresh parsley before serving.
