Refreshing Quinoa and Black Bean Salad Recipe

Serves: 2

Ingredients:

  • 1 cup quinoa, rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup boiled sweet corn
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 small red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste

 

Instructions:

  1. Cook the quinoa according to package instructions. Let it cool.
  2. In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, sweet corn, cucumber, red onion, and cilantro.
  3. Drizzle with fresh lime juice and season with salt and pepper.
  4. Toss everything together until well mixed.
  5. Serve chilled or at room temperature.
