Ingredients:

  • 200g paneer, cubed
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 zucchini, sliced
  • 1 red onion, cut into squares
  • 1 cup cherry tomatoes
  • 2 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Cooking Instructions

Instructions:

  1. Prepare the Marinade:
    • In a large bowl, combine lemon juice, paprika, turmeric, cumin, coriander, salt, and pepper.
  2. Marinate Paneer and Vegetables:
    • Add the paneer cubes, bell peppers, zucchini, red onion, and cherry tomatoes to the bowl.
    • Toss everything gently to coat the paneer and vegetables evenly with the marinade.
    • Let it marinate for at least 15 minutes.
  3. Assemble the Skewers:
    • Preheat your grill or grill pan to medium heat.
    • Thread the marinated paneer and vegetables onto the soaked wooden skewers, alternating between the different vegetables and paneer pieces.
  4. Grill the Skewers:
    • Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred and the paneer is golden brown.
  5. Serve:
    • Remove from the grill and serve immediately. Enjoy these healthy and delicious paneer and vegetable skewers.
