Beef-Cheddar Potato Croquettes

Makes: 5 dozen
Ingredients:
- 4 cups cold mashed potatoes (with added milk and butter)
- 6 slices cooked beef, crumbled
- 1/2 cup shredded cheddar cheese
- 2 large eggs, lightly beaten
- 1/4 cup sour cream
- 1 tablespoon minced chives
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 40 Ritz crackers, crushed
- 1/4 cup butter, melted
- 1 teaspoon paprika
- Barbecue sauce, Dijon-mayonnaise blend or ranch salad dressing
Instructions:
- In a large bowl, combine mashed potatoes, crumbled beef, cheddar cheese, eggs, sour cream, chives, salt, and pepper. Mix well.
- Shape the mixture by tablespoonfuls into balls.
- Roll the balls in cracker crumbs.
- Place the coated balls on parchment-lined baking sheets.
- Cover and refrigerate for at least 2 hours or overnight.
- Combine the butter and paprika and drizzle over the croquettes.
- Bake at 375°F (190°C) until golden brown, about 18-20 minutes.
- Serve warm with your choice of dipping sauce.

Note:
- You can make and freeze these croquettes for up to 3 months.
- For freezing, make the croquettes, drizzle with the butter mixture, and then transfer them to freezing containers.
