Aussie Sausage Rolls

Aussie Sausage Rolls (Beef)

Prep Time: 30 minutes
Makes: 3 dozen

Ingredients:

  • 1 medium onion, finely chopped
  • 2 tablespoons minced fresh chives or 2 teaspoons dried chives
  • 2 teaspoons minced fresh basil or 1/2 teaspoon dried basil  
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper  
  • 1 teaspoon paprika, divided
  • 1-1/4 pounds bulk beef sausage
  • 1 package (17.3 ounces) frozen puff pastry, thawed

Instructions:

  1. Preheat oven to 350°F.
  2. Combine chopped onions, chives, basil, garlic, salt, pepper, and 3/4 teaspoon paprika in a bowl.
  3. Add the beef sausage to the mixture and mix lightly but thoroughly.
  4. On a lightly floured surface, roll each pastry sheet into an 11×10 to a half-inch thickness rectangle.
  5. Cut each lengthwise into 3 strips.
  6. Spread 1/2 cup sausage mixture lengthwise down the center of each strip.
  7. Fold sides over filling, pinching edges to seal.
  8. Cut each log into 6 pieces.
  9. Place on a rack in a 15x10x1-inch pan, seam side down.
  10. Sprinkle with remaining 1/4 teaspoon paprika.
  11. Bake until golden brown and the sausage is cooked through, about 20-25 minutes.
  12. Take out of the oven and enjoy warm!
