Grilled Vegetable Skewers with Creamy Tzatziki

Ingredients:

  • 1 large zucchini, sliced into thick rounds
  • 1 large aubergine (eggplant), sliced into thick rounds
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste

For the Tzatziki:

  • 1 cup plain Greek yogurt (low-fat or non-fat)
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Prep the Vegetables:
    • Preheat your grill to medium-high heat.
    • In a large bowl, combine the zucchini, aubergine, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes.
    • Drizzle with olive oil and season with dried oregano, garlic powder, salt, and pepper. Toss to coat evenly.
  2. Assemble the Skewers:
    • Thread the vegetables onto skewers, alternating between different types of vegetables for a colorful presentation.
  3. Grill the Skewers:
    • Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
  4. Prepare the Tzatziki:
    • While the vegetables are grilling, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper in a bowl.
    • Stir until well combined and adjust seasoning to taste.
  5. Serve:
